8 eggs

1 large onion

½ red bell pepper

½ green bell pepper

4 tomatoes

2 garlic cloves

5 tablespoons oil (or any vegetable oil)

Salt and pepper to taste

100 g stuffed olives

Preparation Steps:

  1. Remove the seeds from the bell peppers and finely chop them.
  2. Peel and finely chop the onion.
  3. Peel the tomatoes, remove the seeds, and cut the pulp into large pieces.
  4. Crush the garlic cloves.

Cooking Instructions :

  1. Heat 3 tablespoons of oil in a saucepan and sauté the chopped vegetables.
  2. Season with salt and pepper and let cook until the water evaporates.
  3. In a bowl, crack the eggs, season with salt and pepper, and beat well.
  4. Heat the remaining 2 tablespoons of oil in a frying pan and pour in the beaten eggs.
  5. Cook while gently bringing the edges towards the center with a spatula.
  6. Place the vegetable mixture in the middle of the omelette and fold it over.
