2 ½ cups (300g) blanched almonds
1 cup (200g) powdered sugar
2 tbsp butter (softened)
1 tsp cinnamon
2–3 tbsp orange blossom water
Optional: 1 tsp orange zest
Dough:
3 cups (375g) all-purpose flour
2 tbsp melted butter
1 tbsp orange blossom water
Pinch of salt
Approx. ½ cup water (to knead)
Instructions :
Make the Almond Paste:
Grind the almonds and sugar into a fine paste. Add butter, cinnamon, orange blossom water, and mix until smooth. Shape into small logs.
Prepare the Dough:
Mix flour, butter, salt, and orange blossom water. Gradually add water and knead until smooth. Let it rest for 30 minutes.
Shape the Cookies:
Roll the dough thinly, wrap it around almond logs, seal and shape into crescents. Trim the excess and arrange on a baking sheet.
Bake:
Preheat oven to 325°F (160°C). Let cookies dry 30 minutes. Bake for 12–15 minutes or until pale golden.
Serving Suggestion:
Kaab El Ghazal is traditionally served with Moroccan mint tea or coffee. It’s perfect for celebrations, holidays, and elegant dessert trays.
